Molten Brie & Onion Dip
2 tablespoons olive oil
1 thinly sliced yellow onion
¼ cup apple cider
2 (8 ounce) wheels of Brie cheese
Salt and pepper to taste
Fresh chives to taste
Heat olive oil in a skillet over medium heat. Add onion and reduce the heat to low. Allow the onions to caramelize slowly, stirring occasionally until they are a deep golden brown. Once the onions are caramelized, deglaze the pan with apple cider. Scrape up any stuck-on pieces and stir into the onions.
Remove the rind from the Brie cheese and cut into small chunks. Turn off the heat and stir in the brie cheese until melted. Season with salt and pepper to taste. Transfer to a serving dish and sprinkle fresh chives on top. Serve with bread and crackers.
